Sunday Supper


Baked Chicken and Rice (doesn't that just sound like a Sunday supper? Comfort food at its best.)

3/4 cup of rice
1 pkg Lipton Onion Soup mix
1 can cream of chicken soup
2 pounds boneless, skinless chicken breasts
2 cups water

Preheat oven to 350. Put rice in ungreased 9X13 baking dish. Place chicken breasts on top of rice. Mix soup and water and pour over top of chicken. Sprinkle with onion soup mix. Cover with foil and bake for 1 hour, or until chicken is done.

I serve this with baby peas.

Uncooked rice. I use converted rice and it cooks up nicely. Do not use minute rice!! It will cook too fast and be a gooey mess. Let me know if you try it.
