Banana Bread Recipe

Because my friend Lysa asked, I am posting my banana bread recipe. I don't know who inspired who, but somehow we both ended up baking banana bread on the same day. I added chocolate chips to mine and my children devoured every morsel today-- one of them even chose to have it for dessert instead of candy! So, that should tell you that it is good stuff.

Here is the recipe:

2 large bananas, very ripe
1/2 cup melted butter or margarine
1 1/2 cups flour
3/4 tsp. salt
1 cup sugar
1 tsp. baking soda
1 egg

Beat egg and add sugar, butter and bananas (mashed). Beat with an electric mixer to well blended. Add this to the flour, soda and salt which have been sifted together. After mixing, put in greased loaf pan and bake at 350 for 45-50 minutes, or until it begins to leave the sides of the pan. Makes 1 loaf. (I often double this.)

this is the best banana bread recipe ever! My family LOVES it!!! the best part is that it is simple enough that my 10 year old son can make it - and likes to make it - so we are all happy around here!
